Are there bubbles in your hummus?

Don’t worry that is perfectly normal. The bubbles appear during our manufacturing process.

High-pressure processing (HPP) is a method used to preserve food by applying high pressure, typically between 100 and 800 MPa (megapascals), to the food product.

When hummus undergoes HPP, bubbles may appear due to several reasons:

  1. Gas Release: Hummus contains gases, such as carbon dioxide, that are dissolved within it. When pressure is applied during HPP, these gases can come out of solution, forming bubbles within the hummus.
  2. Air Entrapment: During the processing, air can become trapped within the hummus due to the high pressure. This trapped air can form bubbles as the pressure is released, similar to what happens when you open a carbonated beverage.
  3. Water Vaporisation: High pressure can cause water within the hummus to vaporise, forming bubbles as the pressure is released. This effect is similar to what happens when water boils at high altitudes due to reduced atmospheric pressure.

Overall, the appearance of bubbles in hummus during high-pressure processing is a complex phenomenon influenced by various factors such as gas content and water properties under high pressure.
